RECIPE

WHOLEMEAL BREAD MIX | 1000 gm |
WATER | 600 gm |
DRY YEAST / FRESH YEAST | 30/12 gm |
METHOD
Place all ingredients into a bowl. Using a spiral mixer (or with hands) knead together for about 6 to 8 minutes to form a well-developed dough. Cover with a damp cloth and let the dough rest for 20 minutes. Scale, cut and mould into desired sizes and shapes. Cover with a greased plastic film or a damp cloth and keep aside in a warm place for a further 50 to 60 minutes or until the dough doubles in size. Remove the cover and place in a preheated oven, bake at 230°C for approximately 30 minutes for a bread loaf of about 400 gm or approximately 15 minutes for bread rolls.
Professional Tip: Best results if lots of steam can be provided just after loading the breads in the oven. If desired, can add sugar and oil as per preference.
