RECIPE FOR BAGUETTE USING AROMA-TIC
INGREDIENTS | QTY (gm) |
AROMA-TIC SOURDOUGH STARTER | 40 gm |
BREAD FLOUR / STRONG WHEAT FLOUR |
1000 gm |
SALT | 20 gm |
WATER | 700 gm |
METHOD
Place all the ingredients into a mixing bowl. Using a spiral mixer (or with hands) knead together for 10 min to form a well developed (silky) dough. Cover with a damp cloth and let the dough rest for 30 minutes. Scale the dough to 300 gm or as desired and stretch it into a slightly elongated shape. Once again cover the dough with a damp cloth and let the dough rest for 30 minutes. Remove the cover and shape the dough in a proper baguette form. Again cover the dough with a damp cloth and keep in warm place for a further 40 to 45 minutes or until the dough doubles in size. Remove the cover and place the baguette into the preheated oven. Bake at 240ºc for approximately 25 to 30 minutes. Bake with lots of steam (for best results).
