METHOD
Place mix into a mixing bowl. Slowly add water while mixing continuously to form a smooth lump-free batter. If using an electric mixer with a paddle attachment, mix on slow speed for about 1 minute or until no lumps are left in the batter. Scrape the batter, add oil to the batter gradually mixing at slow speed for about 2 minutes or until a smooth, consistent batter is achieved. Pour the batter into a muffin tray/mold. Place the muffin tray in a preheated oven and bake at 180ºC for 25 to 30 minutes or until a knife inserted comes out clean.
