Place mix into a mixing bowl. Slowly add water while whisking continuously to form an aerated sponge batter. If using an electric mixer with a whisk attachment, whisk on slow speed for about 1 minute or until no lumps are left in the batter. Then scrape the mixture down thoroughly before whisking again for 2 minutes on medium speed. Add oil to the batter gradually while whisking on medium speed for about 1 minute or until smooth consistent batter is achieved and keep mixing for 2 more minutes. Pour the batter into a cake tin or tray. Place the tin or tray in a preheated oven and bake at 180ºC for 25 to 30 minutes or until a knife inserted comes out clean.
