400 gm
WATER 220 gm
VEGETABLE OIL 40 gm
FRUIT MIX 320 gm

 

FRUIT MIX SUGGESTION: Tutti Frutti - 50 gm | Cherry - 50 gm | Dates - 50 gm | Black Raisins - 140 gm | Orange Peel - 30 gm | TOTAL: 320 gm


METHOD

Place mix into a mixing bowl. Slowly add water while whisking continuously to form a smooth batter. If using an electric mixer with a whisk attachment, whisk on slow speed for about 1 minute or until no lumps are left in the batter. Then scrape the mixture down thoroughly before whisking again for 4 minutes at fast speed. Add oil to the batter gradually while whisking at slow speed for about 1 minute or until a smooth consistent batter is achieved. Add suggested fruit mix and blend it manually. Pour the batter into a cake tin or tray. Place the tin or tray in a preheated oven and bake at 160°C for 60 minutes or until a knife inserted comes out clean.

Since the flavours in the plum cake take time to develop, we recommend consuming the plum cake a minimum of 24hrs after baking for the best experience.
