German Nordländer Bread mix is a convenient complete mix for the preparation of traditional dark German rye bread with lots of sunflower seeds. It has an intensive rye malty taste, darker interior, and very long shelf life.

|WATER||560 - 600 gm|
|FRESH YEAST/DRY YEAST||30/10 gm|
Place all ingredients into a bowl. Using a spiral mixer (or with hands) knead well for about 14 to 16 minutes to form a developed dough. Cover with a damp cloth and let the dough rest for 30 minutes. Knead the dough again for about 4 mins to 6 mins. Cover the dough once again with a damp cloth and let the dough rest for 20 minutes. Scale, cut and mould into desired sizes and shapes. Cover with a greased plastic film or a damp cloth and keep aside in a warm place for a further 40 to 45 minutes. Remove the cover & decorate the dough with sunflower seeds (optional). Place the tin/mould into the preheated oven. Bake at 240°C for approximately 40 to 45 minutes. Bake with lots of steam.
Tip: Best results if steam can be provided just after loading the breads in the oven.
